I am loving making my own chocolate – especially because these recipes are so good for you! Being made from raw ingredients they are packed with vitamins and minerals, antioxidants and other goodies. I usually make this version (many thanks to Julia Starkey of In Harmony Yoga Retreats for this one).

  • 1 cup cacao powder (raw chocolate)
  • ½ cup good coconut oil
  • ¼ cup (or to taste) honey

Preparation:
Put all ingredients into a bowl and mix until blended.
Add goji berries, coconut, nuts or other yummies to taste.
Pour into a tray, freeze for 10 before cutting.
(My favourite version is adding a good cup of shredded coconut, about ½ cup of gojis and 2 tablespoons of dehydrated pomegranate seeds. I then free form it thinly on a greased tray, freeze it for 10 minutes and then break it up into shards.)
Keep in the freezer, gets better with age. If it has the chance….

But recently the lovely Nerida at Sun and Earth Health Food Store in New Farm published this one – which is evilly decadent…..

  • 1 cup cacao powder
  • 2 tablespoons coconut oil
  • 2 tablespoons melted cacao butter
  • ¼ cup agave syrup
  • ¼ cup maple syrup
  • 1 decent pinch of Himalayan sea salt
  • The insides of 2 vanilla pods (I used a splodge of vanilla bean paste)

Preparation:
Grate or chop the cacao butter finely, and melt it with the coconut oil by placing it into a steel or glass bowl placed inside a larger bowl containing hot water from the tap. Stir as much as needed until the oils have melted.
In a blender, place the oils, the agave, maple syrup, salt and vanilla and blend until slightly warm.
Add the cacao powder and continue blending until mixed through completely.
Place the mixture in the fridge so that it becomes slightly thicker and easier to mould if needed, or pour straight into moulds and put in the freezer or fridge (depending on how you like your chocolate!)

Now I am torn. Have to keep both in the freezer just in case. It is good for you after all, in moderation.
